So it is Tuesday! Work was crazy today but there is a light at the end of the tunnel, so hopefully all things there will end on a good note and in a good place before our mini getaway!
I was planning on trying a #BakedChickpea recipe today in preparation of finding a healthy snack for the road trip, but alas, I do not have any chickpeas! THAT is problematic. So I decided to instead share my recent #swap happy mail. I hope that it shows you a brief glimpse into the fun world of being part of a craft group! You make so many friends and connections. I know that I have made several life friends.
I made #GreekMarinatedChicken for dinner today; this actually comes from a recipe I found on Pinterest. You can find the original recipe below! The original called to make it as skewers; but when I first attempted this recipe, I didn't have a grill OR skewers, so, I improvised.
I still cut the chicken into 1/2 - 1" bite size pieces and followed the marinade. I left out the 1tsp of salt to reduce the salt.
**DID YOU KNOW: You can use fresh lemon juice to add the salt flavor to the dish while keeping the sodium out? Check out this "About the Buzz: Use Lemon Instead of Salt" article! I have tried this #trick in several recipes, not only does it work, but it also adds an extra bit of freshness to the dish!**
Another difference is that I add the lemon into the marinade and add 2 Tbs to the 2 Tbs olive oil mixture to be incorporated after the chicken is cooking. You can also use the 2Tbs of oil in the marinade and omit the oil in the pan. I have found that a lot of times there is enough moisture from the marinade, squeezing a fresh lemon over the chicken during cooking process is sufficient (do NOT use this method over an open grill; again, this is my process for stove top cooking :-) ). I have to tell you that even my picky husband LOVES this recipe. It for sure is a #familyfavorite. Whether you are loading sticks up with a bunch of veggies, or sauteing it directly on the stove top, this recipe has an amazing punch of flavor. Not only that but the ingredients are all #clean #lean and #PCOS friendly! You can pair with the recommended vegetable combination (onions and peppers) from the original recipe, or simply pair with your own choice of healthy sides that your family enjoys.
